Cooking Pasta

Be sure to cover pasta completely with water, add salt and some oil to the water. The oil helps keeps the water from boiling over.As soon as the water begins to boil turn the heat down to a simmer. When you drain your pasta do not let it sit in the strainer for very long or it may dry out. After you have drained add some oil and stir it into the pasta, this will keep the pasta from getting sticky.

There are hundreds of different kinds of pasta. Most of the time you can exchange whatever kind you prefer. Try different types you may find one you like more then others.

If you are going to be using your pasta in a recipe that requires additional cooking such as is a casserole only cook you pasta for about 5 minutes after it begins to boil, as it will cook the rest of the way once you add it to your recipe for baking.Some boxed foods, like hamburger helper, do not have you cook your pasta first they just have you throw it all together. But I like to bring the pasta to a boil, with salt and oil first any ways for about 5 minutes and drain. Then follow the recipe on the box.

Pasta is loaded with starch, and this gets rid of that sticky starchy taste. In the old days they used to save the water from boiled pasta and potatoes and use it for starching clothes. If you look at water you drain off your pasta or potatoes you will see it looks white, that is the starch in the water.
