Milk Substitutions

In most recipes you can substitute any kind of milk (1%, 2%, whole or skim), sour cream, sour milk, buttermilk or sour canned milk. For instance my banana bread recipe calls for 1/2 cup sour milk. You can sour milk by using a teaspoon lemon juice, vinegar or lime juice, or you can use sour cream. Just add a little milk or water to it to thin it some, or you can use buttermilk. It really wont change the out come of the recipe.

This is one of the gripes I have with many cook books, they make it sound like if you don't use exactly what it calls for it wont turn out. Most of the time it will turn out just fine, it may vary slightly in taste but maybe for the better. Don't be afraid to try out different things, the worst that can happen is you learn something from it.
