Chicken Noodle Soup
1 3 1/2 to 4 lb. chicken (any chicken, legs, thighs, backs, ect. If you want to buy a whole chicken take off the parts you want to use for soup and use the rest of the chicken for a different meal). You can keep the breast to bake at another time.
1 sm. onion chopped up a bit
3 carrots, cleaned, and cut into bits
1 cup chopped celery (optional)
1 bay leaf (optional)
1 tsp. salt
1/4 tsp. pepper
1 1/2 cups dried noodles
about 2qts. water
Boil all ingredients except for the noodles until the chicken starts to fall off the bones. Remove the chicken and let sit
on a cookie sheet or in a bowl until it cools enough to handle it then remove all the skin and bones and discard them. Return
the chicken to your broth, bring to a boil and add the noodles, let simmer(simmer is when the broth is boiling a soft
continual boil) until the noodles are nice and soft.
If you are going to use a crock pot it is best to boil the chicken until you can take the bone out, then put it all in the
crock pot including the noodles and cook it on low, you can cook it 6 to 8 hours. You can place the whole chicken in and
take the bone out before serving too, but i find it harder to get all the little bones out when it has cooked so long.
