Scalloped Corn
For a little fancier corn make Scalloped Corn its easy and very good.
You will need 2 cans of cream corn, 1 tube saltine crackers, or about 3/4 cup bread crumbs ( bread crumbs can be bought in the grocery store usually in the baking department get the unseasoned. If you use the crackers in the tube, just crush them right in the tube with your fingers or place on a flat surface and use the bottom of a glass or cup to crush them. Dont have to be to fussy on how crushed they are, just nicely broken up, like oatmeal
Spray a deep casserole dish with cooking spray for easy clean up, Place the creamed corn in the dish then add the crushed crackers or bread crumbs. Then in one of the empty corn cans, place two eggs, stir briskly with a fork to mix the white and yoke together then add enough milk so that the can is about 3/4 full and mix with the eggs, pour mixture over the top of the corn, crackers or bread crumbs, and stir. Just enough to mix it all up.Hand crush any unsweetened cereal like Corn Flakes or you can use bread crumbs over the top of the casserole and add a dab of butter or margarine on top. Place this in the oven and bake at 325° for 40 minutes .
