Zucchini Bread
3 eggs (beaten)
1 cup oil
2 cups sugar
3 cups flour
4 cups ground zucchini (peel zucchini and place in food processer)
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1 tsp. vanilla
Mix all ingredients together then pour into 2 loaf pans. Bake at 350° for
50 minutes or until a knife inserted in the middle comes out clean. Loosen bread by
running a knife around the edges then tip out onto wax paper, tip back so top is up.
