Waffles

4 eggs
2 cups sour milk (1 tsp. vinegar or lemon juice to sour the milk) or buttermilk
1/2 tsp. salt
1/2 cup oil
2 cups flour
1 tsp. soda
1 tsp. baking powder
1/2 tsp. sugar

Blend dry ingredients together, add the egg to the milk then slowly add it to the dry ingredients. While you are mixing your batter have your waffle iron heating, if you drop a little water on it it shoud spit when it is hot enough. Some waffle irons have a light that goes off when its ready.

Have a small bowl with a little oil in it by the iron and brush a little oil on both sides of the iron plates. Pour about a 1/4 cup of batter into the bottom iron plate then close. Cook for a few minutes then gently lift the lid and see if the waffle is brown, keep frying until they are nice and golden brown.

You can make extra and freeze them, then just microwave them a few seconds and they will be very good.
