Old Fashioned Pancakes

2 cups flour
1 tsp. soda
1/4 cup sugar
1 tsp. salt
2 eggs
2 1/4 cup sour milk
1/2 tsp. vanilla

Mix the first four ingredients with a fork to blend.

In another bowl place 2 1/4 cups sour milk (remember you can sour the milk with a tsp. of vinegar or lemon juice) add 2 eggs then beat with a fork to mix the milk with the egg. Add 1/2 tsp. vanalla. Slowly add the milk mixture to the dry ingredients. Then add 1/4 cup melted (make sure its not to hot) shortening, oil, or margarine.

Heat a large frying pan, or grill to med high. When you drip a bit of water on it the water will make a bounce and disappear. Spread a large spoon of batter on the grill and smooth it out, if you like thin pancakes spread it out so its quite thin, if you like thicker ones don't spoon them out as far. Also if you like thin pancakes you may add more milk to the batter to make it thinner. If you batter looks a bit lumpy it shouldn't hurt just try to break up the lumps with the bottom of a spoon.
