Quick Lemonade Bread
1/3 cup plus 1 tbsp. frozen lemonade concentrate, thawed
1 cup sugar
1/2 cup shortening or margarine
2 eggs (beat slightly before adding them)
1 1/2 cup flour
2 tsp. baking powder
1/2 cup milk
Combine all ingredients except the lemonade. Blend well beat about 3 minutes with electric mixer.
Pour into a greased and floured loaf pan. Bake at 350° for 1 hour or until a knife inserted in the middle
comes out clean. Run a knife around the outside of the bread and tip out onto wax paper, flip over so
top is up then pour the lemonade over it. Let stand until it is completely cool.
