Date Bread (2 Loaves)
3 cups dates chopped (check them over as sometimes pits are missed in their packaging)
4 tsp. baking soda
4 tsp. butter or margarine
1/2 tsp. salt
2 tsp. vanilla
2 cups boiling water
4 cups flour
2 cups sugar
2 eggs
1 cup chopped nuts
Combine dates, soda, butter or margarine, in a large bowl then pour the hot water over,
let cool until water is luke warm then add the rest of the ingredients. Mix ingredients
well then pour into well greased and floured loaf pans and bake at 300° for 1 1/2 hours.
Remove from oven, let sit for about 10 minutes. Run a knife around the edge of the bread,
then tip onto wax paper, flip back over so the top is up, or it may stick to the paper.
