Carrot Bread
1/2 cup sugar
1/2 cup. brown packed brown sugar
2 eggs (Break eggs into a small bowl whip until well blended)
3/4 cup oil or melted vegetable shortening, or margarine (butter or lard may be to rich)
1 1/2 cup grated carrot (wash and scrape carrots then grate using a fine grate)
1 1/2 cup flour
1/2 tsp. salt
1 tsp. soda
1 tsp. cinnamon
Mix all ingredients well. Place into a well greased and floured loaf pan. Bake at 350° for 45 to 60 minutes or
until a knife inserted into the middle comes out clean. Let sit for about 10 minutes. Run a knife around the outside
of the bread, tip upside down on a piece of wax paper or plastic wrap, tap the bottom of the pan a couple of times and
it should drop out. Flip it over so its top is up. If you don't flip it right away it may stick to the paper. I
like to place mine into a zip lock bag but do not seal it until it cools completly.
This may be frozen until you want to use it. Simply allow it to sit out until thawed or place it in the microwave for
a couple minutes. Also you may add some raisens or nuts to this if you like.
