Easy Jello Pudding Salad
1 pk. Orange Jello
1 pk. Vanilla Pudding
1 can Crushed Pineapple
1 can Mandarin Oranges
1 cup Minature Marshmellows
Depending on how big of amount of salad you want you can use either the small boxes of jello and pudding or the large boxes.
If you use the small boxes buy the small cans of fruit. Also I think you can use the instant pudding if you want but I have
not tried it. A lot of these type of older recipes were wrote in the days before "instant" was an available option. Also the
days of burning cooked pudding, and believe me I have burned a lot, are behind me. I now cook it in the microwave and it works
wonderfully.
Prepare the Jello and let sit for a short time, about 15 minutes or until it starts to look thick.
Follow the directions on the jello package or if you want to make it a little more favorful drain the juice from the
pineapple and use that along with enough water to egual the amount of water the package calls for.
Cook the pudding and allow it to cool to at least room temperature so it does not melt the jello. To cook the pudding in the
microwave put the pudding mix into a microwave safe bowl and slowly add the required amount of milk. Remember any type of
milk will work. I personally do not like to use skim milk in pudding but if you are on a strict diet it will work just fine.
Place the bowl into the microwave and cook for 2 minutes. Stir pudding then continue to cook 1 minute at a time until you
can see that it is bubbling. Remove from the microwave and allow to cool. If you need to cool it quickly just place it in
your freezer for 15 minutes or so.
Once your pudding and jello have cooled all that needs to be done is too mix it all together. In a large bowl combine jello,
pudding, pineapple, oranges and marshmellows.
Refrigerate until you are ready to serve.
Keep in mind this is just a basic recipe. Don't be afraid to try to add different fruit and make it your own. If you like
banana, use banana. If you like fruit cocktail use that. Just be sure whatever friut you use that you drain it well so you
don't get to much liquid in the salad.
