Bread Pudding

The day before or several hours before leave slices of bread out so they will dry out or you may place them in a warm oven for about a 1/2 hour then turn the oven off and leave them sit for awhile. They don't need to be hard just on the dry side.

2 cups dry bread (I cut the bread unto small pieces like croutons.)
1 Tbsp. butter or margarine (melted)
3/4 cup sugar
1 tsp. vanilla
4 cups milk
1/4 tsp. salt
4 slightly beaten eggs
1/2 cup raisens
1/2 tsp. cinnamon

Mix together the eggs, milk, butter, salt, sugar, and vanilla.

Place bread in a cake pan that has sprayed with a vegetable spray. Pour the egg mixture over the bread then sprinkle the cinnamon over top. Bake at 350° for about 50 minutes or when a knife inserted in the middle of the pudding comes out clean.

I like to serve the pudding with this butterscotch sauce.

1/2 cup butter or margarine
1/2 cup milk (for a richer sause use cream, or evaporated milk)
1/2 cup sugar
1/2 cup packed brown sugar
1 tsp. vanilla

In a medium size sauce pan combine butter, milk, brown sugar, sugar. Cook over medium heat until it starts to get a bit thick. Remove from heat and add the vanilla.

Serve warm over top of the pudding.
