Pineapple Drops

1 cup margarine
1 1/2 cup sugar
1 cup undrained crushed pineapple (save left over juice for frosting)
2 eggs beaten
1 teaspoon baking soda
4 cups flour

In small mixing bowl mix together flour, salt and baking soda. Then in another larger bowl mix together the butter, sugar, egg and crushed pineapple.. Blend together until smooth. Gradually add flour mixture, mixing by hand once necessary. Drop dough by the spoonful on lightly greased cookie sheet 2” apart. Bake at 375° for 7 to 10 minutes or until cookies are lightly golden brown. Frost once cookies have cooled.


Frosting

In small bowl combine 1/4 cup butter and 2 cups powdered sugar. Gradually add 1 teaspoon of pineapple juice at a time until frosting becomes spreadble.
