Date Filled Drop Cookies
2 cups dates, cut up
1/2 cup water(if dates are very dry, add a little more water)
2 tsps. sugar
Cook dates until they become mushy. Remove from heat and cool.
Cookie Dough
2 cups brown sugar
1/2 tsp. salt
1 tsp. vanilla
1 tsp. soda disolved in 1/4 cup hot water
1 cup shortening or solid margarine
3 eggs
3 1/2 cup flour
The dough is quite soft so chill for about a half hour. Drop by tsp. on a lightly greased cookie sheet then
press the dough down with the bottom of a floured glass. Drop a dab of the dates on top, then put another bit
of cookie dough on top. Bake at 350° for about 11 min.
These are very good cookies, they stay nice and soft if kept in a closed container.
