Peppermint Taffy

1 1/2 cups sugar
1/4 cup water
1/8 tsp. salt
1/2 cup white corn syrup
2 tbsp. butter or margarine
1/2 tsp. peppermint extract

Combine all ingredients except the peppermint extract in a large heavy pan. Cook to soft crack stage 270° or until it forms a ball that sets up fast and has a hard feel to it when dripped into a cup with cold water in it.

Once it reaches soft crack stage pour onto a buttered surface, like a cookie sheet or a cutting board you use for baking. Let cool enough to be able to handle then add the peppermint. Pull the candy like a rubber band looping it back and forth over on itself then pulling again until it turns white. Then pull into long ropes. Crack in pieces after it hardens.
