Peanut Brittle

1 tbsp. butter or margarine
1 cup chopped peanuts
2 cups sugar

Prepare ahead by buttering a large cookie sheet and setting it aside.

In a small pan melt 1 tablespoon butter or margarine then add the peanuts and place on low heat. Keep them warm on low until you add them to the caramelized sugar.

For this recipe you have to caramelize sugar. This means you will be slowly melting the sugar using a medium heat as not to burn it. You want it to become a nice rich brown. It should look kind of like brown gravy. You will need to stir it constantly with a wooden spoon. As soon as it becomes a rich brown color remove it from the heat and add the warm peanuts. Immediately after pour mixture on your prepared pan. Use two forks to stretch the candy by lifting and pulling it. Let cool completely then break into pieces. Store in a tightly covered container.

Makes about 1 1/4 pounds.
